During a collaboration with a fine-dining restaurant in Honolulu, Hawaii, I got the opportunity to design and create bespoke pieces, each inspired by a specific course of the chef's tasting menu. A beautiful dish of grilled wagyu beef finished with a bright grassy, herbaceous sauce deserves to be plated on a vessel inspired by the lush, green curves of the local Koolau mountains; a semi-matt glaze with patterns of white and grey--more exciting than a plain white glaze--contrasts nicely with the red of the meat and green of the sauce. For food to be fully appreciated, attention must be paid to the way it is arranged and presented before the diner, and I believe that includes the vessel on which the food is served.
